Adjusting the color option within the program can transform a color JPEG file to black and white without discarding important color information, which might be needed for future projects.

      Open the photo-editing program to edit the photo. Select the program from the computer desktop or "Start" menu. Select "File," then "Open" from the program toolbar menu to open the photo file. Click on the JPEG image file located in the "File Open" window, and select "OK" upon completion.

      Select the "Adjust Color" option from the program menu, then select the "Saturation" option. If working in a professional photo-editing program such as Photoshop, select "Image" from the toolbar menu followed by "Adjustments," then "Hue/Saturation."

      Click and move the slider on the "Saturation" option to the left, until the color in the photo has turned to black and white. Using this option will create what is called a "Non-destructive Edit," meaning that the color information has not been discarded. If the user wishes to undo the black and white adjustment, it can be done by moving the "Saturation" slider to the right.

      Correct the brightness and contrast of the JPEG image. Select "Adjust Exposure" or "Adjustments," then "Brightness/Contrast" in the "Image" menu of the program. Move the "Brightness" and "Contrast" slider in the window to make further adjustments to the image.

      Save a copy of the JPEG image file by selecting "File," then "Save As" from the toolbar menu. This will permit the original JPEG file to remain intact. Rename the file as "Black and White Copy," and select the current or a new destination in which to save the JPEG file. Click "OK" upon completion.
