Butternut squash, a winter squash, has a hard skin, lots of seeds and can range in size from 8 to 12 inches in length and 3 to 5 inches wide. The squash has a yellow or tan color outside, with orange flesh and a sweet taste. Instead of baking, frying or grilling the squash, you can cook it in the microwave. Instructions

      Rinse the butternut squash under cool water. Dry it with paper towels.

      Cut the squash in half. Remove the seeds with a spoon. Place the squash on a microwave-safe plate with the cut side facing down.

      Cook the squash on high for 5 minutes.

      Check the texture of the squash by piercing it with a knife. If the squash still feels firms, continue cooking the squash for an additional 5 minutes or until the squash softens. Serve the squash mashed or add it to your preferred recipe.
