How to Freeze Salted Herring
Preserving herring keeps it edible and healthy for a longer time, even without freezing the fish. There are several preservation options available for herring, including salting, drying and smoking. According to Science Clarified, salting herring prevents bacteria buildup and keeps the fish fresher. Salt water usually takes longer to freeze than fresh water, which can result in longer freezing time before the salted herring freezes completely.

Place the herring in a freezer-safe container. Plastic containers are ideal, but any freezer-safe container is fine. The container should have extra room available. If not, use a second container and add some of the fish to the second container so that both containers have extra room.

Pour water over the salted herring--cover the fish completely with water so that none of it is sticking out of the water. Adding the water minimizes the effects of the salt by diluting them over a larger area. Put the lid on the container to prevent freezer burn.

Place the container in the freezer. Depending on the size of the container, the amount of fish and the amount of water, the salted herring will freeze in about 24 hours or so. According to Help With Cooking, the ice block method will typically freeze overnight to form a solid block of ice.
