Homemade Spaetzle (Noodles)
Spaetzle is a type of instant, fresh noodle that is simple to make. The noodle is made by pushing an egg-based dough through a strainer into boiling water. The noodles cook quickly, producing a light and fluffy noodle that is tasty and delicious. The most important tool to have for this process is a Spaetzle press or a potato ricer. If you do not have a press, then you have to form the noodles by hand, which is a time consuming and messy process. It is possible to make a batch of Spaetzle in less than an hour. - Stainless steel bowl
- Whisk
- Wooden spoon
- Measuring cup
- Eggs
- Flour
- Salt
- Spaetzle press
- Medium saucepan
- Knife
- Strainer
- Serving bowl

Preparing Spaetzle

Mix four cups of flour, four eggs, one teaspoon of salt and ¾ cups of water with the whisk in a stainless steel bowl. When the dough becomes too stiff for the whisk, stir the batter with a wooden spoon.

Knead the dough inside the bowl for a few minutes to mix the ingredients. If the texture is too doughy to knead, add a bit more flour. Allow the dough to sit for 30 minutes.

Heat some water and a pinch of salt on the stove while the dough is sitting. Bring the water to a full boil. The pot should be at least half full of water.

Place the spaetzle press over the saucepan when the water boils and the 30 minutes are up. Gently spoon some spaetzel dough into the press. Do not overfill the press. None of the dough should escape from the sides when you press down on the press.

Press the spaetzle press handle down to push the dough into the boiling water. When the press is empty, scrape the bottom with a knife to cut the noodles loose from the press. The water should boil the entire time.

Watch for the spaetzle to surface. This should take between 30 seconds and a minute. When the noodles rise, the spaetzle is ready to come out.

Use a strainer to pull the spaetzle out from the boiling water. Allow the noodles to dry for several seconds. After they dry, place the noodles inside a serving bowl. Place the bowl in an oven set at 200 degree Fahrenheit to keep it warm while you make more batches of noodles.
