Homemade Polish Kielbasa
The Polish kielbasa is a popular polish sausage used in various delicacies. Most, however, prefer to eat the Polish kielbasa as smoked or cured sausage. Some families have been making their own Polish kielbasa using the traditional recipe. While you can easily buy one in the market or grocery store, it is much more fun to create a Polish kielbasa right in your home. Things You'll Need
- 3 pounds of 80 percent lean pork butt
- 2 pounds of trimmed beef chuck
- Meat grinder
- 8 cloves of fresh garlic
- Mixing bowl
- 1 tablespoon of dried marjoram
- 1 tablespoon of fine ground black pepper
- 1 teaspoon of Prague powder No. 1
- 1 cup of ice water
- Spatula
- Large hog casing
- Smoker

Remove the bones in the meat and cut your pork and beef chuck into 1-inch cubes. Place them inside your meat grinder, and set aside the ground pork and beef in a separate plate.

Crush the eight cloves of garlic and place them in your mixing bowl, along with dried marjoram, fine-ground black pepper, Prague powder and kosher salt. Mix all the combined spices with your cup of ice water, using your spatula to stir the ingredients together.

Pour your water and spice mixture into your plate of ground meat. Mix all the ingredients together with your hands for two to five minutes to ensure even distribution.

Stuff the sausage in a large natural hog casing, about 35 mm to 38 mm in length, as soon as all the ingredients are fully mixed.

Place the sausage into the smoker and leave it to smoke until it turns into your desired temperature or color.
