You can substitute half-and-half mixed with butter for heavy cream.

Many food items have easy and obvious substitutions. If a recipe calls for brown sugar, for example, you can substitute white sugar mixed with molasses. Similarly, you could substitute lemon or grapefruit juice for orange juice in many recipes. Some ingredients, such as heavy cream, do not have such obvious substitutes. With a little creativity, however, you can combine common household ingredients to make a substitute that will work for cream in many dishes. Does this Spark an idea?

  • 1/6 cup butter
  • 7/8 cup half-and-half

Instructions

      Melt the butter and allow it to cool to near room temperature. Do not, however, allow it to solidify again.

      Pour the half-and-half into a bowl and add the melted, cooled butter.

      Whisk lightly with a fork until the butter and half-and-half is well blended. Use this combination in place of 1 cup of cream. Add it to your recipe at the same time and in the same way as you would have added the heavy cream.

Tips & Warnings

  • You cannot substitute this mixture for heavy cream in cases where the cream needs to be beaten until fluffy, such as whipped cream.
