Corn tortillas, made from corn flour, are a staple used in Mexican dishes such as tacos and enchiladas. Warming the corn tortilla enhances the flavor. The tortillas require a small amount of water to keep them from scorching during the reheating process. Wrapping the warm tortillas with the proper covering keeps them warm for several hours.   • Non-stick cooking spray
  • Griddle
  • Flat spatula
  • Cloth
  • Basket
  • Paper towels
  • Microwave-safe plate

Instructions

  1. Griddle

    • 1

      Spray a griddle with non-stick cooking spray. Heat the griddle to a medium setting.

      Run water over your hands from the sink. Sprinkle water from your hands over the front and back of the tortillas.

      Place tortillas one at a time on the hot griddle. Flip the tortilla with a flat spatula after five to six seconds, then remove from the griddle after another five seconds.

      Place the warm tortillas into a cloth-lined basket.

    Microwave

      Moisten two paper towels with water.

      Lay one paper towel on a microwave-safe plate. Place three to four corn tortillas on the paper towel. Lay the other paper towel on top of the tortillas.

      Place the tortillas in the microwave.

      Heat the tortillas on high for 30 seconds. Remove them from the microwave.

      Line a plate or basket with a clean cloth. Lay heated tortillas on top of the cloth. Fold the cloth over to keep tortillas warm.
