  • Large bowl
  • Whsk
  • Wooden spoon
  • Spatula or knife
  • Baking pan
  • Parchment paper
  • Towel
  • Flour
  • 2 eggs
  • Baking powder
  • Salt
  • Milk
  • Sugar
  • Vanilla

Instructions

      Prepare the cake portion of the jelly roll by mixing one cup of sifted cake flour (if you don't have cake flour, add an extra teaspoon of baking powder), two eggs, 1 1/2 teaspoons of baking powder, 1/4 tsp. of salt, 3/4 cup of sugar, 1/4 tsp. of vanilla and two tbsp. of milk. Mix the ingredients and spread the mixture in a 10x15 inch baking pan lined with parchment paper.

      Bake the cake in an oven pre-heated to 375 degrees Fahrenheit for about 10 minutes or until it starts to brown. Don't let it overbake or it won't roll properly. Remove the cake from the oven and let it cool slightly

      Turn the pan upside down and let the cake fall out onto a towel. Peel off the parchment paper.

      Roll the cake loosely--use the towel to help you roll it. Let it cool.

      Unroll the cake and spread your jam or jelly on it. Roll it up again, this time tightly. Dust with powdered sugar and slice.
