How to Use Bunn Ultra-2 Gourmet Ice Granita Machine
The Bunn Ultra-2 Gourmet Ice System features two hoppers, each of which can mix and freeze three gallons of granita-style drinks. The Ultra-2 is designed with a reversing augur that cuts the amount of time it takes to chill and aerate drinks. Freezing and cleaning are controlled from a touch pad on the front of the unit. Blend the granita mix with water in a bucket according to the manufacturer's instructions.

Open one of the hoppers and pour in the granita mix.

Power on the dispenser. Press and release the augur button on the side of the machine.

Press and release the "Off/Ice/Chill" button and select "Ice" to begin the freezing process.

Wait until the liquid has reached the proper frozen consistency before serving.

Serve the granita by placing a cup or glass under the dispenser and pulling down on the black handle.

Tips & Warnings
Allow the granita to thaw overnight when the system is not in use to prevent large ice crystals from forming in the hopper.
Beverage thickness can also be programmed through the use of hidden buttons on the key pads.
Keep granita mix refrigerated until you need it. This reduces freezing time.
Clean the augur and hoppers daily. Failure to do so can cause the growth of bacteria in the hopper.
Never operate the augurs with the hopper lids open.
