How to Make Ceasar Salad Dressing
The next time you host a dinner party, treat guests to a crisp salad topped with creamy handmade Caesar dressing. A Caesar salad typically contains a mix of romaine lettuce, croutons and freshly shaved Parmesan cheese in addition to the tangy, lemon-juice enhanced dressing. A Caesar salad is the ideal way to begin any type of dinner, from casual to formal. You can also turn the salad into a main course with the addition of grilled chicken, shrimp or tofu. Things You'll Need
- Six peeled garlic cloves
- 1 tbsp. Dijon mustard
- 1 tbsp. vinegar
- Two pinches of salt
- 2 tbsp. mayonnaise
- 1/2 cup olive oil
- Pepper
- Lemon (optional)
- Anchovy fillet (optional)

Place the peeled garlic cloves, Dijon mustard, vinegar and salt into a blender. Put the lid on the blender and blend on medium setting until ingredients form a paste.

Add the mayonnaise and blend until the paste thickens.

Turn the blender to a low setting. Slowly pour the olive oil into the blender through the hole in the lid.

Remove the blender lid and pour the dressing into a small glass bowl. Scrape the sides of the blender using a rubber spatula to get all of the dressing.

Season the dressing with salt and pepper to taste. Cut a lemon in half with a knife and squeeze the desired amount of juice into the dressing to give it a tangy flavor. Mince an anchovy fillet using a knife and add it to the dressing if you prefer a richer, saltier taste.
