Pad Thai is a stir-fried noodle dish that originated in Thailand. It is made with flat rice noodles that are sold fresh or dried. If you buy dried rice noodles, it is important to soak them properly before stir-frying. This will soften the brittle dried noodles and create soft, uniform noodle texture in your Pad Thai.       Heat a pot of water on the stove until it is about to boil.

      Remove the hot water from the stove and put the dried rice noodles in the pot. Allow the noodles to soak while you prepare the other ingredients, approximately 10 to 15 minutes.

      Test for doneness by taking a few strands and examining their color and texture. If the noodles are ready to be stir-fried, they will be white and opaque. They should be soft enough to eat, but still firm (a bit firmer than "al dente"). If they are still translucent, continue soaking until they are ready.
