The U.S. Army GI mess kits issued today are made from stainless steel and have a clam-shaped design. Two large top and bottom pieces fit together, forming a single unit. You can use this design to broil or slow cook meats and other foods over an open fire or camp stove. There are techniques to keep meat from sticking to the stainless steel surface of the GI mess kit.

Instructions

      Add 1 to 2 tsp. of cooking oil to the bottom of the GI mess kit pan before adding the meat. Carry the cooking oil in a small, watertight plastic bottle sealed in a zip-lock bag to prevent oil from leaking onto camping gear.

      Slowly heat the oil in the pan by holding it 6 to 8 inches above the flame of the cook stove or campfire. Add the meat to the heated oil to flash fry the outer edge of the meat, preventing it from sticking to the bottom of the GI mess kit pan.

      Remove the meat from the pan and set meat aside. Rinse the pan out with camp soap and water. Wipe with a washcloth to prevent the oil from congealing on the bottom of the mess-kit pan.

      Build a campfire and let the wood burn down to a solid bed of coals. With the trowel, push the coals aside so you have a small pit.

      Line the inside of the bottom part of the mess kit with aluminum foil. Place the meat on top of the aluminum foil. Put the top of the mess kit onto the pan and seal. Place the mess kit pan into the coal bed pit.

      Slowly broil the meat in the foil. This cooks the meat and prevents it from sticking to the stainless steel. Clean the pan by removing the aluminum foil.
