If you've ever tasted a bitter eggplant, it's enough to swear off the purple fruit all together. To remedy the situation, you can simply sweat the vegetable.       Wash the skin of the eggplant with water.

      Trim off the ends of the eggplant and cut into desired size.

      Place the eggplant into a colander.

      Sprinkle the vegetables with salt.

      Let the eggplant sit for about 30 minutes.

      Rinse under water and use the eggplant for the recipe of your choice.
