Lemon pound cake is delicious by itself, but proper garnish can elevate it from a run-of-the-mill pound cake to a tasty work of art. Things You'll Need

  • 1 cup plus 3 tablespoons powdered sugar
  • 1/3 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • Poppy seeds
  • Lemon zest curls
  • or:
  • 1/4 cup sugar
  • 1/4 cup loosely packed mint leaves
  • 2 cups whipping cream
  • 1/2 cup powdered sugar
  • 12 ounces lemon curd
  • 1 quart fresh strawberries, sliced
  • Fresh mint sprigs

Instructions

  1. Lemon Icing Garnish

      Whisk together powdered sugar, cream and lemon juice.

      Continue to whisk until smooth.

      Strain through a fine sieve.

      Drizzle the icing over the lemon pound cake.

      Top the cake with poppy seeds and lemon zest curls.

    Mint Berries and Cream Garnish

      Blend the sugar and mint leaves in a food processor. Set aside.

      Use an electric mixer to beat together the whipping cream, 1/4 cup of powdered sugar and 1 tablespoon mint mixture from Step 1.

      Beat at medium speed until stiff peaks form. Fold in the lemon curd.

      Combine the remaining mint mixture and powdered sugar in a separate bowl. Add the strawberries.

      Top the cake with the lemon cream and strawberries. Place mint sprigs around the cake.
