Instructions

    • 1

Strain the yogurt. Place the mesh strainer on the large bowl and cover with the cheese cloth. Pour the yogurt on top of the cheese cloth, fold over the edges to cover and refrigerate overnight.

Tip: The straining process removes the moisture from the yogurt, giving it a creamier texture. If you wish to skip this process, use a thicker Greek yogurt, or it is sometimes possible to find ready-strained yogurt.

    • 2

Put the yogurt, vanilla, sugar and fruit (if required) into a food processor and blend thoroughly.

Tip: If you are using berries, blend the berries first and sieve to remove the seeds before adding to the other ingredients. Alternatively, if you want a crunchy texture with added nutritional benefit, leave them in.

If you have an ice cream maker, pour the mixture into the freezer can and follow the manufacturer's instructions.

If you do not have an ice cream maker, pour the mixture into a 9 x 13 inch baking tray and place in the freezer. Stir every hour or two until the edges are frozen hard.
