How to Make Clear Lollipops
Making your own lollipops is a lot more fun than buying them at the store because you get to customize everything about the lollipop, including size, shape, color and flavor. With the right equipment and proper technique, you can bust out a batch or two of lollipops in no time. It is not difficult to make the lollipops clear; in fact, it's easier because you omit a step. While people of any age will enjoy the lollipops you make, creating them is an adult activity due to the severity of sugar burns. Does this Spark an idea?
Things You'll Need
- Sugar
- Corn syrup
- Medium saucepan
- Candy thermometer
- Candy flavoring oil
- Flavorless cooking spray
- Lollipop molds
- Lollipop sticks

Combine two cups of sugar, two cups of corn syrup, and one cup of water in a medium saucepan. Stir well with a metal spoon until the sugar has dissolved and bring the mixture to a boil, stirring occasionally.

Stick a candy thermometer into the mixture. When the temperature reaches anywhere between 290 and 300 degrees, take the pan off the heat and stir in six drops of candy oil flavoring. Stir the flavor in gently, as too much stirring will cloud the candy and take away from the clear finish.

Use extreme caution as you pour the hot candy mixture into a lollipop mold tray that has been oiled with a flavorless cooking spray. Set a lollipop stick in each space.

Allow the candy to harden and cool, at least thirty minutes. The lollipops will be flavored but colorless and clear.

Tips & Warnings
You can find fun lollipop molds at baking stores or online. Lollipop sticks are available at craft stores, baking stores and online.
Use a wet paintbrush to gently push down any sugar crystals that form around the edge of the pan while the candy is cooking.
