1
Wash 1-pound of strawberries three to four hours before you will cover them with chocolate. Leave the top stems in place. Allow the strawberries to dry completely on a piece of paper towel, as water will cause the chocolate not to stick.
-
2
Fill the bottom of a double boiler half full of water. Place the top pan in place upon the bottom and turn the stove to medium heat.
-
-
3
Place 16 ounces of semi-sweet, white or dipping chocolate into the top pan of the double boiler. If using dipping chocolate, there is no need to add shortening to the recipe as this chocolate with automatically stick to the strawberries.
-
4
Add 2 tbsp. of shortening to the chocolate. Stir the chocolate mixture as it begins to melt, being sure not to let it scorch on the bottom.
-
5
Place a piece of wax paper underneath a wire cooling rack to catch any chocolate drips. Stick toothpicks into the top stem portion of the strawberries. This makes the process of dipping easier, as you will not have to dip your fingers into the chocolate.
-
6
Turn the heat to the chocolate down to simmer, once melted. Keeping the chocolate slightly warm keeps it from setting up, making the process of dipping easier.
-
7
Hold the strawberry by the toothpick and dip it into the chocolate. Swirl the berry around in the chocolate until coated with the desired amount.
-
8
Place the berries, stem side down, onto the wire cooling rack. Allow the berries to cool for approximately 15 minutes. Store the chocolate-covered strawberries in the refrigerator until you are ready to serve them.
