Bins of mixed greens are now readily available at most supermarkets. Make sure you wash and dry them before using. This recipe serves 4.
Things You'll Need
- 3 tbsp. olive (not virgin) oil
- 3 scallions chopped diagonally
- 2 tbsp. balsamic vinegars
- salad bowls
- salad spinners
- 2 quarts mixed greens
- 2 vine-ripened tomatoes sliced into wedges
- 1/2 c. coarsely crumbled Gorgonzola

Wash and dry your mixed greens. Use a salad spinner to dry the leaves and place them in a large salad bowl.
Add tomatoes, scallions and Gorgonzola, if desired. Set aside.
Whisk together 3 tbsp. olive oil and 2 tbsp. balsamic vinegar in a small bowl until emulsified. Add salt and pepper to taste.
Pour balsamic vinaigrette over the greens and toss lightly. Serve immediately.
