    • 3 tbsp. olive (not virgin) oil
    • salt
    • peppers
    • 3 scallions chopped diagonally
    • 2 tbsp. balsamic vinegars
    • salad bowls
    • salad spinners
    • 2 quarts mixed greens
    • 2 vine-ripened tomatoes sliced into wedges
    • 1/2 c. coarsely crumbled Gorgonzola
    • Peppers
    • Salt
    • Salad Bowls
    • Salad Spinners

        Wash and dry your mixed greens. Use a salad spinner to dry the leaves and place them in a large salad bowl.

        Add tomatoes, scallions and Gorgonzola, if desired. Set aside.

        Whisk together 3 tbsp. olive oil and 2 tbsp. balsamic vinegar in a small bowl until emulsified. Add salt and pepper to taste.

        Pour balsamic vinaigrette over the greens and toss lightly. Serve immediately.
