How to Make Mixed Green Salad


Bins of mixed greens are now readily available at most supermarkets. Make sure you wash and dry them before using. This recipe serves 4.

Things You'll Need

  • 3 tbsp. olive (not virgin) oil
  • salt
  • peppers
  • 3 scallions chopped diagonally
  • 2 tbsp. balsamic vinegars
  • salad bowls
  • salad spinners
  • 2 quarts mixed greens
  • 2 vine-ripened tomatoes sliced into wedges
  • 1/2 c. coarsely crumbled Gorgonzola
  • Peppers
  • Salt
  • Salad Bowls
  • Salad Spinners
  • Wash and dry your mixed greens. Use a salad spinner to dry the leaves and place them in a large salad bowl.

  • Add tomatoes, scallions and Gorgonzola, if desired. Set aside.

  • Whisk together 3 tbsp. olive oil and 2 tbsp. balsamic vinegar in a small bowl until emulsified. Add salt and pepper to taste.

  • Pour balsamic vinaigrette over the greens and toss lightly. Serve immediately.
