Basic fudge contains a simple three ingredients, and can be made on the stove or in the microwave. The rich, smooth and indulgent flavor of fudge make it seem an elegant or gourmet treat, when the reality is anyone can make it at home. The key is to stir the fudge frequently while it is cooking so as not to “cake” the chocolate too early. Microwave fudge will give you easy and impressive candies perfect for gift giving and entertaining. Does this Spark an idea?

Things You'll Need

  • 3 cups white chocolate chips or chunks
  • 1/4 stick cold butter, chopped
  • 14 oz. can condensed milk
  • 1 cup nuts
  • Microwave-safe bowl
  • Small square/round/rectangle baking dish
  • Parchment paper
  • Spatula
  • Extra nuts or chocolate chips

Instructions

      Pour 3 cups of white chocolate chips or chopped white baking chocolate (from a block or bar) into a microwave-safe bowl, preferably glass. Chop 1/4 stick of butter into small pieces and sprinkle on top of the white chocolate. Pour an entire can of condensed milk (not evaporated milk) over the butter and chocolate.

      Microwave the the mixture for 30 seconds on high. Remove and gently stir, loosening up the ingredients. Return to the microwave for an additional one to two minutes, stirring after each 30 seconds. Stop when all of the ingredients are melted. Stir the mixture well to aid in the melting.

      Add 1 cup of crushed walnuts, almonds, macadamia nuts or pistachios to the melted fudge and stir in quickly. Nuts are optional; add nothing if you prefer to leave the fudge plain.

      Pour the melted fudge into a parchment-lined or buttered baking dish. The dish can be rectangle, square or round. Butter or oil a spatula and flatten the top of the fudge until it is smooth and uniform. Sprinkle any crushed nuts or white chocolate pieces or chips while it is still gooey. Work quickly during this step; once you remove the fudge from the microwave it begins to harden and will resist shaping.

      Let the fudge cool on the counter for two to three hours or place in the fridge for one to two hours for faster cooling and hardening. Once the fudge is cool and set, remove it from the pan and cut into squares, slices or make cutout shapes using cookie cutters.
