Wheat germ, which is the embryo of the wheat kernel, is a byproduct that is often discarded after wheat is processed into refined flour. This is unfortunate, because according to Discovery Health, wheat germ is an excellent source of folic acid, which lowers the levels of a product in the body called homocysteine. A lower level of homocysteine is believed to lessen the risk of a heart attack and osteoporosis-related bone fractures. Storing raw wheat germ is crucial because it can become rancid in a matter of hours if kept improperly.

      Purchase wheat germ that is fresh. Wheat germ can generally be found at a health food or grocery store and will smell something akin to toasted nuts. If the wheat germ smells musty, avoid it.

      Place an opened package of wheat germ into an airtight container. Depending upon the amount of wheat germ being stored, a zippered bag or a larger plastic container will be sufficient.

      Store the wheat germ in the refrigerator for up to nine months. If the wheat germ begins to smell musty before this point is reached, discard it.

  • Raw wheat germ in a vacuum-sealed, unopened container can be stored on the shelf for up to one year.

  • Place any leftover wheat germ back into the refrigerator immediately after use. Raw wheat germ can begin to spoil within a matter of hours if exposed to the elements.
