Though some use meat as a filling, another popular variation features ricotta and spinach and is locally popular in various locations throughout Italy.   • 1 lb. ricotta cheese
  • 4 oz. cooked chopped spinach
  • 1 tbsp. Parmesan cheese
  • 2 egg yolks

      Pour 1 lb. of ricotta cheese into a mixing bowl.

      Add the 4 oz. of cooked chopped spinach.

      Add a shake of salt and pepper into the spinach and cheese-filled mixing bowl, as well as 1 tbsp. of Parmesan cheese.

      Add two egg yolks to the mix, omitting the egg whites from the mix.

      Stir the bowl with a fork until the yolks and cheese have mixed into the cheese, and the spinach is evenly distributed through the mix.
