Active yeast, which is live yeast used for baking, is responsible for dough rising. Without live yeast, dough will not rise. When active yeast is dried, it can be stored longer than fresh yeast. But even if a package of dried yeast is opened, it can still be kept for a number of months, as long as it is stored properly. Does this Spark an idea?

      Place the open, dry yeast package in a plastic sandwich bag or a small, plastic container with a lid. Seal the bag or container.

      Put the bag or container in your refrigerator. Bread World recommends placing the yeast in the back of the refrigerator, where it will be away from drafts. A warm draft changes the temperature, and yeast should be kept cool.

      Use the open package of yeast before the label expiration date, and as soon as possible after opening the package. Bread World says yeast may last three to four months if stored properly.

Tips & Warnings

  • According to Bread World, you can find out if your stored active, dry yeast is still active by performing the following test: Fill a measuring cup with 1/4 cup warm water (the water should be 100 to 110 degrees Fahrenheit). Add 1 tsp. sugar and 2 1/4 tsp. dried yeast. Let this stand for 10 minutes. If the yeast foams enough to rise up to the 1/2 cup mark on the measuring cup, it is still active enough to use in recipes.

  • Bread World recommends against freezing yeast.
