Pizza stones are interesting in that, like all stoneware, they absorbs some of the oils and flavors of foods cooked on them. Likewise, stones will absorb flavors from cleansers and soaps, so care should be taken to avoid them. While fragile in the sense that they can break when dropped, they are durable in that they can be frozen, baked and refrigerated. Most pizza stones are made from lead free clay.       Clean your pizza stone with hot water. Soaps and cleansers can flavor your stone and the foods you cook on it. It is common for them to discolor over time, so you can also use a baking soda paste periodically for deep cleaning. When you use baking soda paste, apply a small amount to a soft cloth or sponge and rub lightly in a circular motion and rinse thoroughly with hot water. Let your stone cool to room temperature before washing.

      Season your stone by applying a thin coating of non-stick cooking spray to the interior surface prior to the first few uses. Stones are generally made from lead free clay, so they will absorb much of the oil and the flavors will enhance the foods you cook for the life of the stone.

      Cook foods on your pizza stone according to the temperature of the recipe. Occasionally, a minute or two may need to be added to the cooking time of some baking recipes when using a stone. Avoid broiling foods on the stone and exposing it to extreme temperatures. Distribute foods evenly and avoid clumping food together.
