Search for small and medium-sized eggplants for the maximum tenderness and sweet flavor.

Inspect the eggplant to make sure that the green cap looks moist and fresh, and the skin is smooth and free of bruises or soft spots.

Gently push the eggplant with your thumb. If the flesh gives slightly but then bounces back, it is ripe. If the thumbprint remains, then it is overripe and the insides will be mushy. If there is no give, the eggplant was picked too early.

Knock on the eggplant with your knuckles to make sure that it is not dry inside. If you hear a hollow sound, do not purchase.
