Instructions
-
Deep Frying
-
1
Prepare the bread dough---keep it moist, chilled and covered---by either letting the dough rise then frying, or after rising shape and fry.
-
2
Use oil that can withstand high temperature such as corn or canola oil, or use the oil that is recommended by the deep fryer's manufacturer. Fill the deep fryer according to the manufacturer's directions, and set the temperature to what the recipe calls for.
-
-
3
Set out the drain rack, or place paper towels on a plate to allow excess oil to drain off the cooked bread dough.
-
4
Heat the oil, and test to see if it's ready by taking a pinch of dough and carefully placing it into the oil. If it sinks and then rises, the oil is hot enough. If it sinks and doesn't return, wait for the oil to get hotter, and try again.
-
5
Place the bread dough carefully into the hot oil. Wait until one side is golden brown---lift a side up to check---then carefully flip it over and brown on the other side. Cooking time varies by recipe.
-
6
Remove the cooked bread dough from the hot oil when it is golden brown all over. Use the slotted spoon to scoop the dough out of the oil, and allow the fried bread dough to drain, then move the dough to the drain rack or paper towel-lined plate for further draining.
Pan Fry
-
7
Prepare the bread dough ahead of time, and place oil into the skillet. The amount depends upon the recipe, but in general it is a liberal coating of the pan's bottom. Turn on the heat to the recipe's recommendation.
-
8
Drop a few drops of water into the pan to see if the skillet is hot enough. If the water sizzles, the pan is hot enough.
-
9
Place the bread dough into the pan.
-
10
Lift the edge of the dough with the spatula to check for browning. If it looks like it is getting too dark but the time the recipe called for isn't up yet, flip the dough. Fry on the other side, then return to the first side. This allows for thorough cooking without burning. Flip as needed.
-
11
Remove from the pan with the spatula and drain, or place on a plate and cover with a towel to keep warm. The bread also can be placed on an oven-safe dish, covered and kept in a warm oven until all of the bread dough is fried.

Tips & Warnings
Keep on top of the oil temperature. Don't let it get too hot---smoking---or too cool; too much dough put into oil at once can lower the temperature, so allow for more cooking time.
