There are many flavors of muffins and pancakes including blueberry, banana, chocolate chip, peach, oatmeal and corn.   • 1 egg
  • Mixing bowl
  • Mixing spoon
  • Approximately ½ cup milk or water
  • 1 7-ounce just-add-water muffin mix pouch
  • Skillet
  • Nonstick cooking spray or cooking oil
  • Spatula
  • Optional: butter, syrup, honey, jam, jelly, chopped nuts, diced fruit, chopped dried fruit, sugar or powdered sugar

      Beat the egg in the mixing bowl. Stir in the milk or water and the muffin mix. Choose a flavored muffin mix for flavored pancakes. Stir the batter about 25 stokes or until the large lumps disappear.

      Add more milk or water if the batter is too thick.

      Coat the skillet with nonstick cooking spray or a thin layer of cooking oil. Heat the skillet over medium heat. The skillet is ready for use when water drops sizzle on the surface.

      Pour two to three tablespoons of batter for each pancake. Cook until the bubbles begin to break on top of the pancakes. Turn the pancakes over and cook until golden brown.

      Serve the pancakes with butter, syrup, honey, jam or jelly.

      Add variety to the recipe by mixing chopped nuts, diced fruit or chopped dried fruit into the batter before cooking. For sweeter pancakes, add one tablespoon of sugar to the batter or sprinkle the pancakes with powdered sugar after cooking.
