Coleslaw, also known as cabbage slaw, is often served as a side with a main dish. Coleslaw generally contains a mixture of shredded cabbage and vegetables. It often contains a vinegar or mayonnaise dressing. You can freeze coleslaw if you prepare it without the dressing because the oil and water will separate when you freeze the coleslaw. Things You'll Need

  • 1 gallon chopped cabbage
  • 1 tbsp. salt
  • Colander
  • 4 small onions
  • 4 cucumbers
  • 2 carrots
  • 1 tsp. celery seed
  • 2 cups sugar
  • 1 cup vinegar
  • 1/2 cup water
  • Freezer safe containers

      Mix 1 gallon of chopped cabbage with 1 tbsp. of salt. Allow it to stand for 30 minutes and then drain it in a colander.

      Chop 4 small onions, 4 cucumbers and 2 carrots and add this to the cabbage. Add 1 tsp. of celery seed and set the ingredients to the side.

      Bring 2 cups of sugar, 1 cup of vinegar and 1/2 cup of water to a boil for 1 minute. Allow the mixture to cool completely.

      Place the cabbage and vegetable mixture into freezer safe containers. Pour the cold mixture over the cabbage and mix it well so that all of the coleslaw is covered completely. Allow it to stand for 5 minutes and then place the lid on the containers.

      Label the containers with the name of the contents and the date. Use the oldest coleslaw first. Defrost the coleslaw by placing it in the refrigerator overnight.
