How do I Use a Pizza Stone in a Conveyor Oven?
Conveyor ovens are one of the most popularly used ovens when it comes to cooking pizza at a pizza restaurant. The reason for this is that conveyor ovens are faster, they don't require as long of preheat time, they cook the pizza more evenly and they are easier to clean. Conveyor ovens don't require the use of pizza stone the way that some conventional ovens might, but if you want to use a pizza stone in a conveyor oven to keep things clean, or because you think it will add something special to the pizza, doing so is simple enough. Power on and preheat the oven to the desired temperature, between 400 and 600 degrees Fahrenheit depending on the type of pizza you are cooking. Heat the oven on the lower end of the temperature range since you are using a pizza stone.

Place the pizza stone on the conveyor of the conveyor oven and then place the pizza on top of the stone. The stone should not be smaller in diameter than the pizza, and the stone and pizza together should be at least a couple of inches shorter than the opening of the oven. If there are fans hanging down on the inside of the oven, then the stone and pizza should be shorter by a couple of inches than the location of the fans.

Power on the conveyor so that it pulls the pizza stone along with the pizza into the oven. The conveyor oven will cook the pizza evenly and the pizza stone will prevent any cheese drippings or bread crumbs from falling into the oven. Also, the pizza stone will cook the pizza from below by retaining heat from the oven.
