How to Make Garlic Green Beans with Portobello Mushrooms thumbnail
Fresh green beans are delicious and packed with nutrition.

Fresh green beans are loaded with nutrients and low in calories. They are packed with Vitamins K, C and A, and also rich with minerals like manganese, potassium and iron. They are a source of fiber, as well. You can pep up boring green beans with garlic and Portabello mushrooms. This dish is simple to make and takes just a few ingredients. This recipe serves four. Things You'll Need

  • 1 pound fresh green beans or Italian beans
  • 3 cloves garlic, peeled and chopped
  • 1 cup chopped Portabello mushrooms
  • 1 tablespoon olive oil
  • 1/2 cup water
  • Salt
  • White pepper
  • 1/4 cup sliced almonds

Instructions

      Wash green beans and snip off the ends. Set aside. Place the olive oil in a deep frying pan on medium heat. Sweat the garlic in the olive oil.

      Add the sliced Portabello mushrooms to the pan and cook for about five minutes or until tender. Place the garlic and mushrooms in a dish and set aside.

      Return the pan to the stove and turn up the heat to medium high. Place the green beans in the pan and stir them over the heat until they begin to turn bright green. Add the water and place a lid on the pan and allow the beans to steam until tender.

      Add the garlic and mushroom mixture to the beans and toss well to coat. Turn the beans into a vegetable dish or on a platter. Top with almonds and serve.
