Fondant is a Play-doh like icing that is used to decorate cakes. It gives a smooth appearance to the cake and an even surface for decorating. Rolled fondant is popular for wedding and birthday cakes. Although fondant can be made in every color imaginable, it is best to start with a white fondant recipe. Things You'll Need

  • 2 lbs. sifted confectioner's sugar
  • 1/4 cup cold water
  • 1 tsp. unflavored gelatin
  • 1/2 cup glucose or white corn syrup
  • 1 1/2 tbsp. glycerine
  • 1 tsp. desired flavoring
  • Large bowl
  • Small saucepan
  • Plastic wrap
  • Airtight container

Instructions

      Sift the confectioner's sugar into a large bowl. Make a well in the center.

      Add the water to the small saucepan. Sprinkle the gelatin onto the water. Let it set for five minutes.

      Place the saucepan on the stove and begin to heat the mixture. Do not let it boil. Stir the mixture until the gelatin is dissolved.

      Remove the saucepan from the heat and slowly stir in the glucose and glycerine until dissolved. Add the flavoring.

      Pour the mixture from the saucepan into the well in the center of the confectioner's sugar. Mix until the sugar is incorporated. Knead the fondant with your hands until it is the desired consistency.

      Form the fondant into a ball and cover in plastic wrap. Store in an air-tight container for 24 hours at room temperature before use.

Tips & Warnings

  • Glucose and glycerine can be purchased at any cake-decorating store.

  • Do not use a metal bowl when making the fondant.
