How to Make Spiced Cranberry Sauce

This sauce is more like a relish. The secret is all in the cardamom, which is a subtle spice that dresses up the cranberries. Makes about 4 c.

Instructions

Things You'll Need:

  • 1 thin-skinned orange with skin still on, cut into 8 wedges
  • 3/4 c. sugar
  • 2 firm but ripe peeled, cored and finely chopped pears
  • 1/2 tsp. cardamom powder
  • 1 12 oz. bag cranberries
  • Plastic Wrap
  • Groceries
  • Food Processors
  • Kitchen Knives
  • Serving Bowls
  • Plastic Wrap
  1. Step 1

    Remove the seeds from the orange wedges with the tip of a knife.

  2. Step 2

    Cut each wedge in half crosswise.

  3. Step 3

    Put half of the orange pieces, cranberries and sugar in a food processor fitted with a metal blade.

  4. Step 4

    Process the mixture until finely chopped.

  5. Step 5

    Put the processed mixture in a bowl.

  6. Step 6

    Repeat with the remaining orange pieces, cranberries and sugar.

  7. Step 7

    Add cardamom and pears to the cranberry mixture. Stir to mix well.

  8. Step 8

    Taste the mixture, and add more sugar, if necessary.

  9. Step 9

    Cover, and refrigerate at least 2 hours before serving.

Tips & Warnings
  • This sauce can be made up to three days ahead of time and can be stored in the refrigerator.
  • If you don't have a food processor, you can use a blender instead.
