Make Mashed Yams With Cider

The addition of cider to these yams make them better than any yams you've had before. Serves 8.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2/3 cup apple cider
  • 2 tbsp. light brown sugar
  • 1/2 tsp. salt
  • 4 tbsp. unsalted butter
  • 5 large yams (about 4 1/2 lbs.)
  • Groceries
  • Potato Mashers
  • Potato Ricers
  • Peelers
  • Small Saucepans
  • Colanders
  • Soup Pots
  • Mixing bowls
  1. Step 1

    Boil the cider over high heat in a small saucepan until reduced by half, about 7 minutes. Set aside.

  2. Step 2

    Bring a pot of salted water to a boil over high heat.

  3. Step 3

    Put the yams in the boiling water and cook 30 to 40 minutes, until tender. Drain well in a colander.

  4. Step 4

    Peel the yams when they are cool enough to touch (but not cold) and return them to the pot in which they were cooked.

  5. Step 5

    Add the cider, butter, brown sugar and salt.

  6. Step 6

    Mash the yam mixture with a potato masher or ricer until well blended. Serve warm.

on 1/19/2006 If you ever buy a frozen pizza; baste the bottom of it with white or malt vinegar. Trust me! Just try it.
