Things You'll Need:

  • 5 scrubbed yams (about 2 1/2 lbs.)
  • 2 c. water
  • 1 tsp. lemon juice
  • 1/4 c. firmly packed brown sugar
  • 1 tsp. freshly grated ginger root
  • 2 tbsp. unsalted butter
  1. Step 1

    Boil 2 c. water in the bottom of a steamer set. Put yams in the steamer, place over the boiling water and cover.

  2. Step 2

    Steam yams for 30 minutes, or until a fork easily pierces the yams.

  3. Step 3

    Remove the yams from the steamer and set aside.

  4. Step 4

    Preheat oven to 350 degrees F.

  5. Step 5
     

    Melt butter over medium-low heat in a saucepan. Add brown sugar and stir until dissolved.

  6. Step 6

    Add ginger and simmer 1 minute.

  7. Step 7

    Add lemon juice and remove from heat.

  8. Step 8

    Butter a deep, 7-by-11-inch baking dish.

  9. Step 9
     

    Peel yams and slice in half lengthwise.

    Put yams flat-side down in the baking dish. Pour butter and brown sugar mixture over the yams.

  11. Step 11
     

    Bake yams for 15 minutes. Serve.

on 11/22/2005 For a lower fat recipe, cut up 2 large yams into small chunks and boil until tender. Strain potatoes, and pour into mixing bowl. Add 4-6 Tbsp of Lite margarine and 4-6 Tbsp of Lite Brown sugar. Beat in mixer on medium speed until it is the consistancy of mashed potatoes. You get the great taste, without all the fat!
