How Do I Peel Fresh Zucchini When the Skin Is So Hard?
Zucchini is a summer squash, similar in appearance to the cucumber. Like other types of squash, zucchini grows on a vine and can be harvested when the fruit is small, mid-sized or large. Small- and mid-sized zucchinis are known to have a softer skin, making them easier to peel. When you want to use a large zucchini for stuffed zucchini the skin may end up being a little tougher. Rinse the zucchini under cool water and rub with your hands to loosen and remove any dirt. Dry the zucchini with a clean towel.

Lay the zucchini on a cutting board. Cut both ends off the zucchini, with a paring knife, removing about 2 inches of each end.

A small paring knife is perfect for slicing and peeling vegetables and fruits. Hold the zucchini in one hand and bring the sharp edge of the paring knife against the zucchini skin at either end of the zucchini. Slide the paring knife underneath the zucchini skin and continue to move it along to peel off a 3- to 4-inch section of peel. Continue this process, all the way around the zucchini to remove the peel.

Peel any remaining zucchini skin bits using a vegetable peeler or you may leave them on for a bit of color.

Tips & Warnings
Choose zucchini with skin that gives a little when you apply pressure feels heavier than it's size.
Overgrown zucchini can have a bitter taste.
