How to Make Cheese Crisps

You don't want your guests to get full before you actually serve dinner, but those smells coming from the kitchen can sure stimulate the appetite. Here's something to tide people over. These are also good for a cocktail party. Makes about 60 crackers.

Instructions

Things You'll Need:

  • 3/4 c. grated cheddar cheese
  • 1 1/2 c. chilled shortening
  • 1 tbsp. cider vinegar
  • 3 c. all-purpose flour
  • 2 tbsp. ice water
  • 1 tsp. salt
  • 1 egg
  • Waxed Paper

  • 1 2-inch biscuit cutters
  1. Step 1

    Mix flour, shortening, salt and 1/4 c. of the cheese in a bowl. Mixture should be crumbly.

  2. Step 2

    Beat egg, vinegar and ice water in another bowl.

  3. Step 3

    Put egg mixture in the bowl with the flour and knead until dough forms a small ball.

  4. Step 4

    Wrap dough mixture in wax paper and refrigerate overnight.

  5. Step 5

    Preheat oven to 350 degrees F.

  6. Step 6

    Roll the dough out to a thickness of 1/8 inch. Cut dough into 2-inch rounds with a biscuit cutter.

  7. Step 7

    Combine scraps, roll out again, and cut dough into more rounds. Repeat until you have used all the dough.

  8. Step 8

    Bake rounds for 8 minutes on a cookie sheet lined with foil.

  9. Step 9

    Remove rounds from oven, top each with a dollop of cheese and bake 10 more minutes.

    Allow rounds to cool a few minutes. Serve.

Tips & Warnings
  • Try substituting Gruyere cheese for the cheddar for a different flavor.
