In order to grow fall vegetables in central Oklahoma, one must begin preparing the garden area in the middle of the summer. Many common garden vegetables, such as tomatoes and beans, must be planted in the hot months of July and August in order to produce their bounty in the fall.       Prepare the soil by breaking up any large, dry chunks of dirt. This can be done with a regular garden shovel or a tiller. Smooth the area with a garden rake. Mix fertilizer into the soil if the area was used as the spring garden in order to restore nutrients to the growing area.

      Plant bush beans by Aug. 15 and they will generally be ready by mid-October. Plant pole beans by July 22 in order to harvest in early October. Plant lima beans in mid-August to be picked in November. Plant tomatoes in early to mid-July for eating by Oct. 1.

      Plant sweet corn, cilantro, eggplant, pepper, pumpkin, summer and winter squash by July 15. Summer squash will be ready within a month and a half. Pumpkins and winter squash may not be ready until mid-November. Egg plant and peppers are generally ready for harvest within three months.

      Spread mulch over the garden area after planting to preserve moisture in the soil during drier summer and fall months. Keep the area free of weeds.
