How to: Baked Rosettes
Traditional Scandinavian rosettes are deep-fried pastries made with a rose-shaped iron. A similar treat can be baked to cut down on the fat and made with a rose-shaped pan if you don't have an iron. Does this Spark an idea?
Things You'll Need
- Rosette pan
- Two eggs
- Dash of salt
- 1 cup milk
- 1 Tbsp. sugar
- 1 tsp. vanilla, lemon or mint flavoring
- 1 cup all-purpose flour, plus more for pan
- Butter for pan

Position a rack in the center of the oven and preheat to 350 degrees.

Mix together the eggs, salt, milk, sugar and your choice of flavoring in a large bowl. Sift in a cup of all-purpose flour. Mix until all ingredients are wet and smooth.

Butter and flour your rosette pan. Cover the entire bottom and sides with butter and sprinkle the flour on top. Shake loose the extra flour and dispose by turning the pan upside down.

Pour the batter into the rosette pan. Allow the batter to settle evenly by sitting on an even counter space prior to placing in the oven.

Place pan in oven and allow to bake 20 minutes. Remove the rosette and poke with a wooden toothpick. If the toothpick comes out clean, the rosette is done. If not, return it to the oven. Check the rosette every few minutes until done.

Tips & Warnings
Instead of frosting, lay a decorative doily over your rosette and sprinkle with powdered sugar.
If your oven is too hot, your rosette will burn on the bottom because of the lack of depth in the pan. Monitor the temperature carefully.
