How to Make a Spectacular Chocolate Cookie
Double chocolate crinkles truly are a spectacular chocolate cookie. They're a hit with all who taste them. This cookie recipe combines unsweetened baking chocolate and semi-sweet chocolate chips, with no saturated fat, to produce a fudgy delight that's as visually appealing as it is tasty. Their distinctive appearance is created by rolling the balls of dough in powdered sugar before baking. The tops of the cookies develop cracks as they bake, resulting in a mottled look. Things You'll Need
- 4 ounces unsweetened chocolate
- 1 cup canola oil
- 2 cups sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 6 ounces semi-sweet chocolate chips
- 1 cup sifted powdered sugar

Melt four 1-ounce squares of unsweetened chocolate, and mix the chocolate with 1 cup of canola oil and 2 cups of granulated sugar.

Beat in four large eggs one at time, mixing after each addition. Add 2 teaspoons of vanilla extract to this mixture.

Mix 2 cups unbleached white flour with 2 teaspoons baking powder and ½ teaspoon salt in a separate bowl.

Add the flour mixture to the chocolate mixture, and stir in 6 ounces of semi-sweet chocolate chips.

Refrigerate the dough for at least three hours, but preferably overnight. You can make it into a ball or log and wrap in wax paper if you wish.

Break off small pieces of dough and roll by hand into teaspoon-size balls. Sift 1 cup powdered sugar into a bowl or plate. Roll each ball of dough in the sifted powdered sugar.

Place the cookies 2 inches apart on a greased baking sheet, and bake for 10 to 12 minutes in a 350-degree preheated oven. Remove from the oven and allow the cookies to cool for one to two minutes on the baking sheet. Transfer the cookies to a cooling rack to cool completely.

Tips & Warnings
Don't over-bake. The cookies should be removed from the oven while still slightly soft.
