Knives need to be sharpened according to their function. For instance, a heavy, bone-cutting knife will need sharpening more often than a steak knife. Instructions

      Run a small amount of hot water into the sink. Add a few drops of dish soap. Let the knife soak for five minutes, then scrub away any grime on the knife. Rinse with plenty of warm water. Dry with a clean towel.

      Spread the towel out on a flat surface and lay your knife on the towel with the sharp side of the blade facing up. Hold the handle of the knife, and run the sharpener along the blade from the handle to the tip.

      Run the sharpener over the blade 10 to 15 times to make sure the entire length of the blade comes in contact with the sharpener.

      Rinse the blade under running water and dry with a clean towel.

  • Knife sharpeners consist of two small blades that come to a V-shaped point that run along both sides of the knife blade to sharpen it. Check the sharpness of the knife by slicing a tomato. If the blade passes cleanly through the skin and into the flesh without excessive pressure, the blade has been properly sharpened.

  • You may notice little flakes of metal coming from the sharpener; this is completely normal. The sharpener shaves away the dull, worn edges of the knife as it sharpens. Make sure the metal filings have been washed away before using the knife.
