A Brinkmann charcoal smoker grill uses a combination of charcoal and flavored wood chips heated at low, controlled temperatures to cook food. This combination is designed to infuse your food with additional flavors in a way that an ordinary charcoal or gas grill cannot.   • Vegetable oil spray
  • Charcoal
  • Lighter fluid
  • Matches
  • Water
  • Flavored wood chips

Instructions

      Remove the water and charcoal pan from the smoker. Pour eight to 10 pounds of charcoal into the charcoal pan and saturate with lighter fluid. Allow the lighter fluid to soak in for approximately four to five minutes. Insert the charcoal pan into the body of the smoker and ignite the charcoal with a match. Allow the coals to burn with the door still open for at least 15 minutes.

      Fill the water pan with cool water to the water line indicator in the pan. Do not overfill.

      Place flavored wood chips on top of the hot coals, at least three to five handfuls. Flavored wood chips can be bought in the grilling section of your local home store in a variety of flavors such as hickory and mesquite. Add more wood chips every 45 minutes to an hour. Close the door of the smoker.

      Place the food on the cooking grate at least a half inch apart. This will allow the heat to circulate around each piece.

      Cover the smoker with the dome lid. Smoke the food for approximately two to six hours, until cooked through and tender.
