How to Make Peanut Meatballs

These meatballs can be served in many ways, such as with spaghetti sauce over pasta, or on toothpicks as an appetizer. A crockpot of these meatballs simmering in tomato sauce would be a big hit at your next office party. Does this Spark an idea?

  • 2 pounds of lean ground beef
  • 3/4 cup of finely chopped peanuts
  • 2/3 cup of dry bread crumbs
  • 1 large beaten egg
  • 4 tbsp. vegetable oil
  • 1 tsp. salt
  • 2 tsp. sugar

      Combine ground beef with all the ingredients in a large mixing bowl. Using your clean hands, mix and mash thoroughly for several minutes.

      Preheat oven to 375 degrees. Shape the mixture into little 1-inch balls. This recipe should make approximately four dozen meatballs. Place as many balls as will fit (approximately 15 to 20) into a two-quart casserole dish. If you have two dishes, use them both. If not, cook the meatballs in two separate batches. Pour 1/2 cup of water in the dish (or in each dish, if you are using two) and cover the dish(es). When the oven is preheated, place the dish(es) in the oven and bake for 45 minutes.

      Remove cooked meatballs from the oven and cool for later use. Or immediately add to spaghetti sauce and serve over pasta. You could also serve immediately as an appetizer (with toothpicks).
