Vietnamese rice paper rolls are a healthy variation of deep-fried spring rolls. This dish is popular in its country of origin as well as in Vietnamese eateries around the world. The skin of the rolls is almost transparent, giving you a good view of all the colors of the vegetables and other ingredients that are in the dish. Things You'll Need

  • 1 cup shredded barbecued chicken
  • Lettuce
  • 1/2 cup trimmed beansprouts
  • 1 small, thinly sliced red capsicum
  • Carrot, grated
  • 1/2 cup fresh coriander leaves
  • Alfalfa
  • 1 lime, juiced
  • 12 x 22cm rice paper rounds
  • Sweet chili sauce, ready to serve

Instructions

      Gather and prepare all of the ingredients for the Vietnamese rice paper rolls.

      Mix together the chicken, lettuce, beansprouts, capsicum, carrot, 1/3 cup of coriander, alfalfa and 2 tbsp. of lime juice in a large bowl.

      Fill a medium bowl with lukewarm water. Put a rice paper round in the water for 15 seconds or until the round is soft. Remove the rice paper round from the water and put onto a clean paper towel.

      Place 1/4 cup of the chicken mixture in the center of the rice paper. Fold the ends in and roll it up tightly to hold the ingredients. Continue doing this for the rest of the rice paper rounds.

      Serve this dish with the sweet chili sauce and what is left of the coriander.
