  • 2-3 ounces of flavoring roots like ginger, if desired
  • 1 cup of mint leaves, if desired
  • 3 lemons, if desired
  • 3 limes, if desired
  • 4 and 3/4 quarts of water

  • 3 tablespoons of lemon juice, if desired
  • 3 tablespoons of orange juice, if desired
  • 3 tablespoons of lime juice, if desired
  • 3/4 cup of sugar
  • 1/8 teaspoon of ale yeast

      Prepare your flavoring ingredients. Mint leaves and ginger root, for example, should be chopped up. Lemons or limes should be zested and cut into quarters. You can create your own soda by mixing and matching different juices, leaves, roots, and fruit with the other ingredients. Use as few or as many flavoring ingredients as you want in the following steps.

      Simmer 1 and 1/2 quarts of water mixed with your flavoring ingredients and juices on the stove for 30 minutes. You can leave it on for up to an hour if you want a stronger flavor.

      Remove the pot from the stove and strain the mixture through a kitchen strainer to remove the solid ingredients. Catch the water in a large pitcher or bowl.

      Mix the strained liquid with 3 more quarts of water and allow the mixture to come to room temperature on the counter.

      Activate the yeast by stirring 1/4 cup of slightly warm water into 1/8 teaspoon of yeast. Allow it to sit for 15 minutes, then stir it into the bowl of water that should now be lukewarm.

      Wait ten minutes, then siphon the mixture into the glass bottles. Allow them to sit on the counter for 16 hours, then put them in the fridge to cool. Consume when they're cold.
