Mold is a type of microscopic fungus that is often found growing on plants or animals. When you see a spotting of mold on a food product, the mold is not just on the surface. According to the United States Department of Agriculture, mold "roots" grow into food, especially when the growth is thick. Many cheeses are made with mold. However, other molds can still attack the cheese. It is possible to cut the mold out of hard cheeses because the mold cannot penetrate very deep.
