The way bread is stored is vital for freshness. The oils and minerals present in wheat flour break down quickly. This is the reason that breads dry out and become hard. Keep bread in the freezer. Freezing is an excellent solution to keep it fresh, especially if you start with the freshest bread from the store or the oven. Cool fresh-baked bread completely. Then wrap it tightly in plastic wrap. Don't place it in a loose plastic storage bag. Alternately, wrap the bread tightly in heavy-duty aluminum foil and place the wrapped loaf in a plastic freezer bag. Push out as much air as possible from the freezer bag before sealing it. The bread lasts for three to five months.

Double wrap store-bought bread before freezing. Plastic wrapped bread from the store should not be frozen in just its plastic wrap. Use freezer safe plastic wrap or aluminum foil over the original plastic wrap. For partial loaves, push out as much air as possible before wrapping.

Flash-freeze the bread to vacuum seal it. Place the bread on a cookie sheet in the freezer for one to two hours. This ensures the bread won't be flattened by the vacuum-seal process. Once sealed, place the bag in the freezer.
