Albondigas is a Mexican soup with a primary ingredient of spiced meatballs (albondigas is also made in Spain and Brazil). Traditionally the meatballs in albondigas soups contain mint. However, since this recipe uses frozen meatballs, you can use chopped mint to top your dish with. When you don't have time to spend hours constructing albondigas soup, you can use vegetables found in your fridge and freezer. Does this Spark an idea?

Things You'll Need

  • 2 tablespoons of ancho chili powder
  • 1 teaspoon dried oregano
  • 3 teaspoons ground cumin
  • 4 cloves of mashed garlic
  • 30 frozen meatballs
  • 3 potatoes
  • 2 zucchini
  • 1 can of diced tomatoes
  • 1 cup of frozen corn
  • 9 to 12 cups of water
  • 3 cubes of bouillon (either beef or chicken)
  • Hot sauce (for flavoring)
  • 1 cup of rice (optional)
  • Chopped cilantro (optional)
  • Shredded cheese (optional)
  • Chopped scallions (optional)
  • Chopped mint (optional)
  • Measuring spoons

Instructions

      Put your spices into a bowl.

      Gather your spices together and place them into a bowl. Set them aside.
