Pot Pie Pockets are individual portions of a pot pie. Simple to assemble, they are just the right size for dinner. These miniature pot pies are stuffed with slow cooked beef, potato, carrot, green beans and gravy, and baked in the oven on a cookie sheet. Things You'll Need

  • 4 refrigerated pie crusts (9 inch)
  • 4 cups slow cooked beef chopped in large chunks
  • 21 ounces beef gravy
  • 30 ounces cooked potatoes
  • 14 ounces cooked carrots
  • 14 ounces cooked green beans
  • Parchment paper
  • Large cookie sheet

Instructions

      Preheat the oven for 350 degrees F. Place parchment paper on two large cookie sheets that you will use to bake your pot pie pockets.

      In a large bowl, place all of your vegetables cut up into bite-size pieces. Add your beef gravy and stir well.

      Add your slow cooked beef and mix. It should also be cut into bite-size cubes.

      Line a clean, flat surface with parchment paper. Flour your surface and unroll one premade pie crust. Lay it flat on the floured surface. Gently roll a rolling pin over the crust to roll it a little thinner.

      Cut the crust into four even sections with a knife or pizza cutter. Each pie crust makes four individual pot pies.

      In the center of each pie crust, place a large scoop of beef, vegetables and gravy.

      Pinch the corners of the crust together carefully. Now press the seams of the dough together to seal in all the pot pie ingredients.

      Place pot pies on the cookie sheets and bake for approximately 45 minutes until the crust is golden brown.

      With the amount of ingredients, you should be able to make 16 pot pie pockets.

Tips & Warnings

  • If this recipe makes too many to make at once, cut your fixings in half and freeze them. Then you'll have them prepared for another dinner.
