How to Make a Zucchini al Mascarpone Sauce for Pasta

The mascarpone cheese in this recipe adds flavor to your zucchini sauce and gives it a bit more texture.   • 4 zucchini
  • 1 onion
  • 1 garlic clove
  • 5 tablespoons olive oil
  • 1 parsley sprig
  • ½ cup of mascarpone cheese
  • Pinch of salt and pepper

      Clean the zucchini and cut them into slices. Set them aside. Thinly slice the onion and sauté it in a pan with the olive oil and the garlic clove.

      As soon as the onions change colors, remove the garlic. Add the zucchini to the saucepan and stir with a wooden spoon. Add the pinch of salt and pepper and the chopped parsley on top. Continue cooking on medium heat for one minute.

      Add 3 tablespoons of hot water to the saucepan. Turn the heat to low and cook for 20 minutes with a lid on.

      At the end pass the sauce through a masher. Transfer the zucchini puree into another pan and let it dry on low heat. As soon as you see it getting a little denser, turn off the flame, add the mascarpone cheese and mix it well. The sauce is ready to spread over hot pasta.
