Soak the fish in soy bean paste before cooking it. The proteins from the soy bean paste can absorb the fishy smell. If you are cooking crucian carp, soak it in one part water and one part vinegar. This particular fish will rid itself of trimethylamine in the vinegar instead of the air.

Slice up one thumb-size piece of ginger for every cup of cooking oil you use, if you choose to use cooking oil when preparing the fish. Place the sliced ginger in the cooking oil, and let it sit there for 15 minutes before you start cooking the fish in the oil. When the fish is done cooking, throw away the ginger. The ginger soaks up the fishy smell and taste, so when the ginger is thrown away, the fishy smell is thrown away with it.

Find fish recipes that include the use of green onion, lemon juice, vinegar, wine and rice wine. All of these ingredients neutralize the fat in fish. When the fat is neutralized, the fish odor disappears.
