How to Grill a Steak Properly
When grilling a steak there are really only two ways to do it; the right way and the wrong way. By properly preparing the steak and the grill, you can cook a steak that is flavorful, moist and done to perfection. Not taking the time to do it right will leave you with a cut of meat that is tough and dry. Does this Spark an idea?
Things You'll Need
- Grill
- Charcoal (unless cooking with gas)
- Non-stick cooking spray
- Steaks
- Grill tongs or fork
- Meat thermometer

Prepare the charcoal in the grill, by lighting the coals and allowing them to reach the ash white state. Spread the coals evenly over the bottom of the grill. If using a gas grill, preheat the grill to medium hot.

Spray the grilling surface with non-stick cooking spray.

Place the steaks on the grill, leaving 1/4 to 1/2 inch between each steak for airflow.

Grill the steaks for 4 minutes, then use grill tongs or a grill fork to turn the steaks over. Again, be sure to leave air space between each steak.

Grill the steaks for an additional 4 minutes. Insert a meat thermometer into each steak at least 1/4 inch to test for internal temperature. A rare steak will read 145 degrees F on a meat thermometer, while a medium will read 160 and a well done will read 170 degrees F.

Continue to cook the steaks until the desired degree of doneness is achieved. If the steaks are becoming too charred on the outside, use the tongs to move them to the outside edges of the grill rack, where it is slightly cooler, and test for doneness every 2 to 3 minutes.

Tips & Warnings
While you can season or marinade steaks before putting them on the grill, leave the salt out of the seasoning until the last few minutes on the grill.
Depending on the steak, porterhouse, rib eye, etc., a steak could be cooked in as little as 8 minutes.
The use of a chimney type charcoal starter helps to get charcoal ready quickly and efficiently.
